It’s Easter and in my hometown region we have the tradition to join the family and do a picnic in the field. But we don’t go there to eat pork chops or some steaks, we eat lamb dishes, especially the one I’m giving the recipe.
I will try to give you some quantities but usually we do this without fixed measures
Ensopado de Borrego – Lamb Stew
- 1 tbsp of lard
- some olive oil
- lamb meat cut in small pieces
- 1 minced onion
- 3 minced garlic cloves
- white wine
- 4 potatoes cut in small cubes
Put the lard and olive oil in a pan and heat. Next add the meat and stir until the meat gain some color. Add onion, garlic, laurel and paprika, let them braise a little and season with salt. Add wine and water and cover the pan.
When the meat is almost cooked, add the potatoes and peas and let it cook the rest. If it needs, add more water.
After about 10-15 minutes, or when it is finally cooked, add a bit of vinegar (some people add more, others less, depends of each person’s taste). And it’s done!
We usually eat this with lettuce cut into thin strips, and bread.
